Super easy custard

  1. In a small bowl, whisk together:
    • 1 egg yolk
    • 1 tablespoon sugar
    • 1 teaspoon cornflour
    until smooth and pale.
  2. Pour 240 ml milk into a small saucepan and heat on low–medium heat until warm (do not boil).
  3. Slowly pour about 2–3 tablespoons of the warm milk into the egg mixture while whisking constantly.
  4. Pour the mixture back into the saucepan.
  5. Cook on low heat, stirring constantly with a spoon or whisk, for 3–5 minutes until thick enough to coat the back of a spoon.
  6. Remove from heat and stir in ½ teaspoon vanilla if using.
  7. Serve warm or let it cool (it thickens more as it cools).
