Super easy custard
- In a small bowl, whisk together:
- 1 egg yolk
- 1 tablespoon sugar
- 1 teaspoon cornflour
until smooth and pale.
- Pour 240 ml milk into a small saucepan and heat on low–medium heat until warm (do not boil).
- Slowly pour about 2–3 tablespoons of the warm milk into the egg mixture while whisking constantly.
- Pour the mixture back into the saucepan.
- Cook on low heat, stirring constantly with a spoon or whisk, for 3–5 minutes until thick enough to coat the back of a spoon.
- Remove from heat and stir in ½ teaspoon vanilla if using.
- Serve warm or let it cool (it thickens more as it cools).
