Blueberry Muffins

first whisk 220ml of buttermilk or milk with 75g melted butter, 1 large egg, 150g sugar and 1 tsp vanilla extract

then add 250g all purpose flour 2 tsp baking powder 1/4 tsp baking soda and a pinch of salt

mix until just combined- be careful not to overmix

finally, fold in 150-180g fresh blueberries

preheat the oven to 190°C (170°C fan)

line a muffin tin with 12 muffin cups and divide the mix into them

bake for 18-22 miniutes until they look golden and a knife comes out clean
